The Philosophy

Honoring Earth, Flame, & Seasons

At Aurelia & Oak, dining is treated as both an elemental ritual and an art form. Every plate tells the geographic and seasonal chronicle of Northern California.

Founded in 2012 by Chef Matteo Laurent and Sommelier Camille Vane, we cook over open fires fueled by California white oak and kiln-dried birch. We forge deep relationships with coastal biodynamic farmers, ocean foragers, and legacy vineyards to bring honest, transformative flavor to your palate.

Zero-waste philosophy across raw kitchen preparations
In-house fermentation and heritage grain sourdough program
Handcrafted pottery made specifically for each seasonal menu

The Artisan Behind The Flame

Chef Matteo Laurent

"Cooking over live wood is not a technique; it is a conversation with time, climate, and the memory of the trees."

Trained in Lyon and seasoned in Tokyo's charcoal yakitori parlors, Matteo's culinary lineage harmonizes strict French precision with rustic hearth cookery. Before unveiling Aurelia & Oak, he spent 6 years leading Michelin three-star kitchens across Europe and North America.

Critical Praise

What Connoisseurs Are Saying

"The bone marrow infused dry-aged ribeye served with ember-roasted leeks is arguably the single finest plate of meat available on the Pacific Coast today."

San Francisco Chronicle Food & Wine Critic

"A sensational union of wood fire alchemy and sommelier brilliance. The Chef’s Nocturne tasting menu is sublime from opening broth to final smoked cocoa truffle."

The Michelin Guide Inspector's Notes

"Atmospheric, seductive, and unpretentiously welcoming. It has rapidly redefined fine dining without the cold formality of yesteryear."
